Milk Kefir Grain Ratio Calculator
Enter your milk amount and pick a grain ratio to see how many grains to use, what that is in tablespoons, and how long the first ferment typically takes.

Grains float toward the top as the milk thickens. Strain them out with a plastic or stainless sieve when the ferment is done - never use fine metal mesh, and never rinse the grains with hot water.
How the grain ratio works
The ratio is by weight: grains grams = milk grams / ratio, so 1:15 on 500 ml of milk means about 33 g of grains. A level tablespoon of grains runs about 6 g, which gives the spoon equivalent. The ferment window scales with the ratio - about 12 hours at 1:5, 18 hours at 1:10, 24 hours at 1:15 and 30 hours at 1:20 at around 20-24 C.

Frequently asked questions
What grain ratio should I start with?
1:15 is the balanced default: enough grains to thicken 500 ml of milk in about a day without souring it first. If the finished kefir is too tangy or separates into curds and whey before you get to it, shift toward 1:20; if it is too thin and sweet, move toward 1:10.
My grains keep multiplying - what do I do with the extras?
Either increase the milk to keep the ratio balanced, share grains with friends, or compost the surplus. Do not stuff a large grain mass into a small milk volume - over-crowded grains ferment fast and sour, and the ratio is what keeps the flavor steady.
Can I make milk kefir with plant-based milk?
The grains will culture soy, nut and oat milk for a few rounds, but they only grow and stay healthy in animal milk. Rotate them back into dairy milk every few batches to recharge them, and keep a separate set if you culture plant milk regularly.
